This is a recipe James and I make. It is completely vegetarian and very delicious.
For the meat eaters out there (I don't judge), you could add some fried bacon or chicken to this.
Ingredients
250g of broccoli florets
30g of butter
1 tablespoon of oil
1 onion, chopped
200g of sliced mushrooms
125mL of gelatine free light cream
1 tablespoon of vegetable stock
2 cloves of garlic
Handful of fresh spinach
Pepper to taste
375g of your favourite pasta
Method
1. Boil a pot of water and cook the pasta as directed on the packet.
2. Steam or microwave the broccoli until just tender
3. Heat the oil and butter in a large pot and saute the onion.
4. Add the garlic and stir.
5. Add the mushrooms to the pot and cover with lid. Let the mushrooms sweat out their juices until soft.
6. Stir in the cream and add the stock powder broccoli and pepper.
7. Add the spinach and allow to wilt.
8. Drain the pasta and add to the pot, stirring to cover the pasta.
Serve. Great with garlic bread.
